    This Peach and Plum Summer Salad is light, refreshing, and a delicious way to celebrate some of summer's best fruit!

    The heat wave has finally hit Portland! And summer's best stone fruits are fresher than ever right now.

    That means it's the perfect time for this peach and plum summer salad!

    Peach and Plum Summer Salad

    This salad is the most delicious way to enjoy ripe peaches and plums.

    You almost don't need a salad dressing with it when the fruit is super ripe. But tossing the peaches and plums lightly in lemon juice and red wine vinegar bumps up the fresh flavor even more. Then all you need is a drizzle of extra virgin olive oil and salt and pepper, and this super simple summer salad is ready to go!

    I love the slight nuttiness of the arugula and the sweet summer corn texture combined with the soft, fruity flavors of the peaches and plums. It's a simple salad that looks elegant on any table.

    How Can You Tell When Peaches and Plums Are Ripe?

    Wondering if those peaches and plums from the market are ripe? Give them a whiff, a gentle nudge, and check their color. Ripe peaches and plums smell sweet and fruity. If you see pleaches and plums with richer color, those are likely ripe. Meanwhile, if the fruit has a little give when you press gently on it (don't squeeze them!), it's most likely ripe and ready to eat!

    Are Peaches and Plums Low Carb?

    Peaches and plums are among some of the lower carb fruits.

    One small yellow peach has about 12 grams of carbs, and a medium plum has approximately just 7 grams of carbs. By comparison, a medium banana has 24 grams of carbs.

    You can easily adjust the recipe to use one less peach and/or one less plum to keep the carbs even lowers.

    How Do You Store Peaches and Plums?

    Got extra peaches and plums? If they haven't yet ripened, store peaches and plums at room temperature until ripe. Fruit usually ripens in 2 to 3 days. Once ripened, store peaches and plums in a refrigeratr crisper drawer. Ripe fruit will keep for about a week in a crisper drawer.

    What to Serve With Peaches and Plum Summer Salad

    This is an awesome summer salad to serve at BBQs, picnics, potlucks, or to enjoy for a leisurely lunch al fresco.

    What Wines Pair Well with Peaches and Plum Summer Salad?

    There are so many different white wines that pair beautifully with this summer salad. Brooks Winery in Amity, Oregon makes a lovely dry muscat that would be wonderful paired with peaches and plums. I would also pair Brooks Winery's 2017 Estate Riesling with this salad.

    And of course, the effervescence of almost any sparkling white wine will bring out the luscious fruit flavors of the salad even more. Try the Brooks Winery 2015 Extended Tirage Sparkling Riesling.

    This summer salad features fresh stone fruits and corn. Perfect for barbecues, picnics, and potlucks!

    Ingredients

    • 2 medium to large peaches, sliced or cut into 1" wedges
    • 2 medium plums, sliced or cut into 1" wedges
    • 2 tbsp lemon juice
    • 1 tbsp red wine vinegar
    • 2 cups baby arugula (or chopped arugula)
    • 1 cup cooked corn
    • drizzle extra virgin olive oil
    • kosher salt and ground black pepper, to taste

    Instructions

    • In a large bowl, mix together sliced or cut fruit with lemon juice and red wine vinegar.
    • Toss in arugula and corn.
    • Drizzle with olive oil and season with kosher salt and black pepper.
