    Puff pastry is the workhorse of prepared doughs, and it transforms butternut squash, mushrooms, and sage vegetarian hand pies into a delicious, hearty snack or main course!

    If you're looking for a quick yet hearty and delicious party appetizer, snack, or side dish, puff pastry is a great start!

    Sure, you could make puff pastry from scratch. But, the store-bought puff pastry are so easy, convenient, and delicious, that I find it's best to leave that ingredient to the pro bakers of the world. Our creativity can shine with the many ways to use store-bought puff pastry!

    You can go the sweet route with puff pastry, like these Air Fryer Apple Hand Pies or Air Fryer Strawberry Turnovers. Or, you can go savory, like with these Mushroom Voul-au-Vents.

    If you're in a savory mood, these vegetarian puff pastry hand pies are a delicious option!

    This vegetarian puff pastry recipe is great for so many yummy reasons!

    • Store-bought puff pastry helps save a lot of time.
    • The mushrooms are a rich, low calorie source of fiber, protein, and antioxidants.
    • Butternut squash lend a distinctive fall flavor and are a low-calorie, fiber-rich source of important vitamins, minerals, and antioxidants.
    • You can cut the puff pastry into any size and shape you want, making these tasty appetizers as well as delicious side dishes.

    🍄 Ingredient notes

    Puff Pastry - Use either store-bought, or your own homemade puff pastry.

    Butternut squash - You can either use my roasted butternut squash recipe, or use cubed butternut squash.

    Mushrooms - I prefer to use brown baby bella mushrooms (cremini mushrooms) or shiitake mushrooms for rich umami flavors, but you can use any mushrooms you like.

    Herbs - Sage goes really well with the richness of the mushrooms and butternight squash. You can also use tarragon or thyme.

    ✅ Step-by-step instructions

    1. Start by simply rolling our the dough. Then cut rounds, squares, triangles, or rectangles using a pastry cutter or cookie cutter. You could even use hearts for Valentine's Day! Set half aside to use as the tops.

    2. Place the other half set of dough shapes onto a baking sheet topped with parchment paper, leaving at least an inch and a half or two inches between each dough piece.

    3. Then take a couple of spoonfuls of butternut squash and sautéed mushrooms, and place in the middle of each dough shape. Then sprinkle freshly chopped sage over each one.

    4. Top each filled dough piece with one of the dough pieces set aside. Using a fork, create a decorative seal by pressing the tines of the fork along the edges. Then give each hand pie some breathing space while baking by poking holes in the middle of the top dough piece with the fork, or cutting slits at the top with a knife.

    5. Bake at 375 degrees for 25-30 minutes.

    Absolutely! Allow to cool completely, then store in freezer bags or freezer-safe, airtight containers in the freezer for up to one month. Thaw completely, then reheat in the oven or air fryer.

    Savory Vegetarian Hand Pies: Butternut Squash, Mushrooms, Sage

    These savory hand pies are delicious as a quick lunch, and either as a main course for dinner paired with a hearty salad or as a great potluck dish to bring to parties!
    Servings: 12 hand pies

    Ingredients

    • 1 package puff pastry dough
    • 2 to 3 cups roasted butternut squash, cut into small cubes
    • 1 to 1½ cups sautéed mushrooms
    • 2 Tablespoons chopped fresh sage

    Instructions

    • Preheat oven to 375 degrees. Prepare a baking sheet by lining it with parchment paper.
    • Roll out the dough, then cut out your preferred shape(s) using a pastry cutter or cookie cutter.
    • Place a filling of a spoonful of roasted butternut squash and a spoonful of sautéed mushrooms in the middle of each round.
    • Sprinkle some chopped sage on top. NOTE: You can put as much or as little filling as you want, as long as the top pastry shape fits over the filling and can touch the bottom pastry dough piece, and as long as you leave enough space around the edge of the bottom so that the top and bottom pieces can bake nicely together.
    • Place the remaining pastry shapes on top of the filled pastry shapes and press edges together to seal. Create a decorate final seal by pressing the tines of a fork along the edges of each hand pie. You can create a breathing spot for each hand pie by either poking the top of each with a fork, or cutting small slits at the top with a knife.
    • Bake at 375 for 25-30 minutes, or until the tops and edges are nicely golden and slightly crisp. Let cool for about 10 minutes.

    Notes

    Makes about 12 to 15 hand pies, depending on the size you cut out the rounds. 
    Storage: allow hand pies to cool completely, then store in an airtight container in the refrigerator for up to 3 or 4 days.
    Freezer: store in a freezer-safe airtight container or in freezer bags for up to one month. Thaw completely, then reheat in the oven or in an air fryer.

        YUM, I can't wait for the Brie + Pear Hand Pies! I'm all for using premade puff pastry, making it yourself is a huge pain in the butt plus there is no need for me to really know how much butter is in these things.
