Preheat oven to 400°F. Roll out pizza dough and pre-bake pizza crust for 8 minutes. During this time, cook the main Thai chicken curry toppings.
In a large saucepan or skillet, heat the olive oil over medium-high heat.
Add the chicken and cook for 1 minute, breaking up the meat as it cooks.
Add the potatoes, onions, garlic, curry powder, soy sauce, and half of the sliced green onions. Stir together to coat the meat and vegetables with the seasoning. Continue cooking and stirring until the chicken is mostly cooked, about 3 to 4 minutes.
Top the pizza crust with the Thai curry chicken mixture. Depending on how thick you want the pizza toppings to be, you may have leftover chicken mixture.
Add the red bell peppers and mozzarella cheese. Top with sliced Thai basil and remaining green onion.
Bake at 400°F for 10 to 15 minutes or until the crust is cooked through and the cheese has melted.
Notes
Makes 4 to 6 servings.Filling: After filling each of the puff pastry squares you may have extra chicken mixture left. Enjoy it served over rice or as the filling for lettuce wraps. Storage: Allow pizza to cool, then store leftover pizza sliced in an airtight container or aluminum foil in the refrigerator for up to four days. Pizza is best reheated in the air fryer or the oven, but you can also reheat in the microwave if needed.
