In a rice cooker or large pot, cook the rice according to package directions. While the rice is cooking, take the leftover chicken meat off the bones and shred or chop into small pieces. Set the meat aside.
Add the oil to a wok over medium-high heat. Once it's hot, add the leftover chicken meat and stir to heat up, about 1 minute.
Add the garlic and cook, stirring constantly to keep the garlic from burning.
Add the cooked rice, soy sauce, and green onions. Stir and cook about 2 minutes.
Garnish with chopped fresh parsley and serve.
Notes
Makes approximately 4-6 servings.Storage: store leftover fried rice in an airtight container in the refrigerator for up to 3 or 4 days.
