Preheat the air fryer to 350°F for about 2 minutes.
Place the halved and pitted peaches skin side up in the air fryer basket. Air fry at 350°F for 5 minutes.
Meanwhile, make the topping by whisking together the remaining ingredients (oats, butter, brown sugar, cinnamon, vanilla) in a medium bowl.
When the 5 minutes are up, flip the peach halves over so they are skin side down. Scoop about one tablespoon full of the topping mixture into the center of each peach half. Air fry at 350°F for 3 to 5 more minutes, just until the oats are a nice golden brown.
Serve with a scoop of vanilla ice cream and/or a drizzle of honey, if desired.
Notes
Makes 4 servings (one half of a peach each)Every air fryer is different, so be sure to watch the peaches on the second air fry time. Some air fryers (and depending on the size of your peaches as well) will cook in 2 minutes, whereas others (like mine!) may take up to 5 minutes.
