Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Place the four squares on top of the parchment paper-lined baking sheet an inch or two apart from each other.
Option 1: Place an oven-proof ramekin on top of the center of each of the squares. Bake at 400°F for 6-8 minutes, just until the edges of the pastry puff up a bit. Option 2: Or, bake them as is for 6-8 minutes, remove from the oven, and then immediately place an oven-proof ramekin on top of the center of each of the squares. Press down gently to create a little dent.
Sprinkle the shredded cheddar cheese evenly over each puff pastry square.
Gently crack one egg over the indentation in the center of each square.
Return the baking pan to the oven and bake for an additional 12-15 minutes or until the eggs are set. The puff pastry will be lightly browned but shouldn't be dark brown.
Sprinkle grated parmesan cheese, kosher salt, and black pepper over each egg in puff pastry. Garnish with chopped fresh parsley. Serve immediately..
