1fried egg
2tablespoonssalsa
2tablespoonsavocadopeeled, pitted, and mashed with ½ tsp lime juice
1teaspoonfinely chopped cilantrooptional
Instructions
If you prefer toasted English muffins, toast them first.
Spread refried beans on the inside of one half of an English muffin.
Top with fried egg and salsa.
Spread mashed avocado with lime juice on the inside of the other half of the English muffin. Sprinkle cilantro if desired.
Top the refried beans, fried egg, and salsa English muffin half with the mashed avocado half.
Notes
Makes 1 breakfast sandwich.Make ahead: Make the breakfast sandwich, allow to cool down, then wrap in aluminum foil, and refrigerate for up to 24 hours. When ready to eat, remove the foil and reheat in a toaster oven, air fryer, or microwave before serving.
