In a tall glass, pour in the rum, lime juice, sugar, and add the mint leaves.
Muddle the mixture together, crushing the mint leaves and combining the ingredients.
Fill the glass with ice then add the mango syrup. Top off with club soda, and stir.
Garnish with a lime slice or lime wedge and a fresh mint leaf sprig. Enjoy immediately. Cheers!
Notes
Makes 1 mojito. Double the recipe to make two mojitos.Mango syrup: you can buy mango syrup or make your own. Note: my mango syrup was very light in color; depending on the mango syrup you use, yours may turn out more orange than the mojito pictured here. To make mango syrup:
Add ½ cup granulated sugar, ½ cup water, and 1 chopped fresh ripe mango to a saucepan over medium heat.
Once the water starts a low boil, reduce heat to low and simmer for 10 minutes, until the mango is soft.
Using a fine-mesh strainer over a bowl, strain the mango mixture, pressing down to extract as much of the juice as possible into the bowl.
Allow the mixture to cool, then pour into a jar or bottle. Refrigerate any leftovers after making the mojito for up to 2 weeks.
