Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, combine all of the ingredients. Toss together until the potatoes are well coated with the olive oil and seasonings.
Bake at 400°F for 40-50 minutes, flipping the potatoes over halfway through. Bake until the potatoes are cooked to your preferred level of doneness.

Makes approximately 4 side dish servings.Storage: allow to cool, then store in an airtight container in the refrigerator for up to 3-4 days. Reheat either in the air fryer, stovetop, or oven.
